Supper Sunday- Chicken Enchiladas

Chicken Enchiladas

Can Cream of Chicken
Can Cream of Mushroom
Small Can Diced Green Chili's
Small Can of Chopped Olives
8 oz. Sour Cream
Shredded Cheese (Colby Jack or Mexican Blend)
Flour Tortillas
3-4 Chicken Breasts
Can of Chicken Broth
Fresh Ground Pepper


1. Boil chicken in chicken broth, water, and pepper. 
2. When cooked, shred in Kitchen Aid with paddle.
3. Mix shredded chicken, Cream of Mushroom, Green Chili's, and Chopped Olives.
4.  Spoon mixture onto flour tortilla and sprinkle with shredded cheese.
5. Roll up tortilla and place in a greased 9x13 pan.  Continue until you've used all your mixture.  I usually get about 10-12.
6.  Mix sour cream and Cream of Chicken.
7.  Spread on top of rolled tortillas.
8.  Liberally spread shredded cheese on top.
9.  Bake at 325 degrees for 45 minutes.

This is also a great meal for freezing.

School Days-November

The month of November was packed with fun at school!  In addition to the normal activities Emily's class led Chapel one week, Emily celebrated her birthday, they had a Thanksgiving Feast, and Emily was Ladybug of the Week this last week.
Emily learned about the letters G and H, the color brown, the shape triangle, and opposites in math.

Emily's class hosted Chapel at the beginning of this month.  It was super cute.  They lead the school in song and prayer.

Emily got to celebrate her birthday at school.  The class sings to her, she got to pass out cupcakes to her friends, and wear a birthday crown.

North Pole Breakfast

Jingle returned from the North Pole this morning and hosted a North Pole Breakfast.  He brought Emily and Madi gifts, Emily's Christmas books, her Santa cup and candy cane silverware. Rudolph brought Jingle last night and he brought reindeer antlers and bells from Santa's sleigh for the girls.

I made green Christmas Tree pancakes this morning but when they cook they turn brown, lol.

Looks like Christmas is going to be lots of fun this year with Madi.  She pulled the tissue and bag immediately.  It was so cute.

She even wanted to help sissy.

Jingle brought Madi pj's to keep her warm because the North Pole is very cold and an elf shirt so she could be an elf just like Jingle.

Jingle brought Emily pj's and the elf shirt as well along with lots of other Christmas shirts.
